❄️Best Italian Soups to warm up on snowy days.❄️

Hey Reader!

I don't know how the weather is where you are, but here it's been snowing since the weekend and it doesn't show any sign of stopping anytime soon.

On these cold days, nothing's better than a hot bowl of soup. 🍲

Here are some of my favorites:

"Ribollita" Authentic Tuscan Bread and Vegetable Soup

Ribollita is a traditional Tuscan soup (or stew) made with stale bread, white beans, cabbage, and more vegetables. This is the real authentic recipe of Ribollita Toscana, the way it's been made in Tuscan households and Trattorias for centuries.

Pastina in Brodo (Easy Italian Pasta Soup)

Pastina in Brodo, a quick and comforting Italian pasta soup, also known as Italian Penicillin, is a beloved staple in many households. This easy-to-make dish warms the heart and soul with its simple yet delicious flavors.

Italian Sausage White Bean Soup

There’s nothing better than a warm, hearty bowl of soup on a chilly day, and this Italian Sausage White Bean Soup is pure comfort in a bowl. With rich Italian sausage, creamy cannellini beans, and nutrient-packed kale, this easy-to-make soup is both nourishing and satisfying.

Spicy & Smoky Pumpkin Gnocchi Soup

Creamy, comforting, and full of cozy fall flavor, this Spicy & Smoky Pumpkin Gnocchi Soup is a bowl of pure warmth. Soft gnocchi simmer in a velvety pumpkin broth infused with smoked paprika, chili flakes, and fresh herbs for the perfect balance of spice, creaminess, and freshness.

Pumpkin Sausage Soup

A delicious spin on the classic "Zuppa Toscana" with pumpkin instead of potatoes. This pumpkin sausage soup is creamy, warm, comforting, and so delicious! It's very easy to make and it's perfect for winter night dinners.

Healthy Tuscan Peasant Soup

"Zuppa del Contadino" or Italian Peasant Soup, is a healthy and simple Tuscan soup full of fibers and vegan. But it's still hearty and cozy, perfect for winter. It has lentils, blackeye peas, split peas, mung beans, farro and barley. But you can use any mix of legumes you have available.
