The days are finally getting longer and warmer and I honestly couldn't be happier. I love spring and summer and I especially love spring and summer food: cold salads, easy meals with all the flavorful produce, colorful and refreshing.

Caprese Salad is a summer staple in every Italian family. It's the easiest dish you can make when it's too hot to cook or just as a delicious appetizer. This version has grilled eggplant for a smoky and flavorful twist, but you can also add more veggies or keep it basic.
