 Hey Reader! Have you ever heard of Ciambotta? It's the Italian version of the French Ratatouille and it's a cozy vegetable soup that it's perfect to use up the last of the summer veggies while also enjoy it warm on those first chilly evenings. It's super versatile because while you can eat it as it is on its own (and it's delicious), you can customize it in many different ways! Some of my favorite versions are with Italian sausage, or with poached eggs, or when I have only a little bit leftover I serve it as side dish to accompany meat, pasta, or fish. Hey Reader! It sounds like a joke but it's not. I actually have fun looking for this dish on Italian restaurants menus when I travel. It's the easiest way to find out if the restaurant is REALLY Italian or not. (Spoiler, most times it's not). If you want to play too, look for Penne all'Arrabbiata. 9 times out of 10, you'll find it mispelled, with only one R, or one B, or two Ts.
